Zucchini and Broccolini Gnocchi

Zucchini and Broccolini Gnocchi

Serves 4

This recipe was inspired by a recipe by Food to Love. Its a go to dinner for me on a work night, and the perfect leftover for lunch the next day. 


  • 500g packet gnocchi

  • 2 tbsp olive oil

  • 50 butter

  • 2 cloves garlic, crushed

  • 1/2 cup natural flaked almonds

  • 1 bunch of broccolini

  • 1 tsp of chill flakes (optional)

  • 2 zucchinis, thinly sliced

  • 1 cup mint leaves, roughly chopped

  • 1 lemon, zest grated, juice squeezed


  1. In a large saucepan of boiling salted water, cook gnocchi following packet instructions. Drain well, reserving ¼ cup cooking liquid.

  2. In a large frying pan, heat oil and butter on medium. Sauté garlic, almonds, broccolini and zucchini for 2-3 mins.

  3. Toss with gnocchi and reserved cooking liquid. Stir in mint and lemon. Serve with grated vegetarian parmesan (or nutritional yeast flakes) and extra mint.
