This recipe was inspired by a recipe by Food to Love. Its a go to dinner for me on a work night, and the perfect leftover for lunch the next day.
Ingredients:

500g packet gnocchi

2 tbsp olive oil

50 butter

2 cloves garlic, crushed

1/2 cup natural flaked almonds

1 bunch of broccolini
-
1 tsp of chill flakes (optional)

2 zucchinis, thinly sliced

1 cup mint leaves, roughly chopped

1 lemon, zest grated, juice squeezed
Method:

In a large saucepan of boiling salted water, cook gnocchi following packet instructions. Drain well, reserving ¼ cup cooking liquid.

In a large frying pan, heat oil and butter on medium. Sauté garlic, almonds, broccolini and zucchini for 2-3 mins.

Toss with gnocchi and reserved cooking liquid. Stir in mint and lemon. Serve with grated vegetarian parmesan (or nutritional yeast flakes) and extra mint.
