Wholesome Blueberry Muffins

Wholesome Blueberry Muffins

This recipe makes roughly 12 medium sized muffins. 


  • 3/4 cup of plant based milk, I used almond milk
  • 1 & 1/2 cups of mashed banana
  • 1 tbs of apple cider vinegar 
  • 1/3 cup coconut sugar 
  • 1/4 cup of liquid oil, you can use coconut oil, olive oil or sunflower oil
  • 1 cup of wholemeal plain flour
  • 1/2 cup almond meal
  • 1/2 cup of flaxseed meal
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1/2 tsp of cinnamon
  • 1 cup of frozen blueberries 
  • Sunflower seeds to sprinkle on top


  1. Preheat oven to 180 degrees. 
  2. Grease a muffin try or use silicone baking cups.
  3. Place wet ingredients in a bowl and mix together, add the mashed banana to this bowl. 
  4. Place all dry ingredients in a bowl and stir to combine. 
  5. Add the wet ingredients to dry ingredients bowl and stir to combine. 
  6. Fold in frozen blueberries. 
  7. Spoon mixture into muffin tin evenly.
  8. Bake muffins for 25 minutes, or until a knife comes out clean.
  9. Cool muffins and enjoy by themselves or with your favourite nut butter
