Serves 2
Ingredients:

2 serves of rice cooked (I cooked my rice in vegetable stock to give it more flavour)

1 x 400g in of refried beans

1 packet of taco seasoning

1 tomato diced
-
1 red onion diced
-
1 small can of drained corn
-
1 avocado
-
1 cup of Iceberg lettuce sliced into thin strips

Tasty cheese grated (as much or as little as you like)

Coriander
-
Lime
Method:

Cook rice as per packet instructions.

Make guacamole: Scoop the avocado onto a plate, add a small handful of the diced onion, a squeeze of lime juice and salt and pepper. Mash it together with a fork.

Make the salsa: Add corn, diced tomato, chopped coriander and the remainder of the onion to a bowl. Squeeze in the juice of a lime and season with salt and pepper. Stir.

Heat the refried beans in a pan and mix in the taco seasoning.

Assemble the bowl, add the rice first and spoon on everything else on top
