Vegetarian Burrito Bowl

Serves 2

Ingredients:

  • 2 serves of rice cooked (I cooked my rice in vegetable stock to give it more flavour)

  • 1 x 400g in of refried beans

  • 1 packet of taco seasoning

  • 1 tomato diced

  • 1 red onion diced

  • 1 small can of drained corn

  • 1 avocado

  • 1 cup of Iceberg lettuce sliced into thin strips

  • Tasty cheese grated (as much or as little as you like)

  • Coriander

  • Lime

Method:

  1. Cook rice as per packet instructions.

  2. Make guacamole: Scoop the avocado onto a plate, add a small handful of the diced onion, a squeeze of lime juice and salt and pepper. Mash it together with a fork.

  3. Make the salsa: Add corn, diced tomato, chopped coriander and the remainder of the onion to a bowl. Squeeze in the juice of a lime and season with salt and pepper. Stir.

  4. Heat the refried beans in a pan and mix in the taco seasoning.

  5. Assemble the bowl, add the rice first and spoon on everything else on top

  6. Enjoy :)
