Vegan Sushi Bowl

This recipe if by Sam Wood. Its quick to make and tastes delicious. This is one of my favourite salad recipes of all time.

Serves 2

Ingredients:
  • 200g pre-cooked brown rice sachet or microwave cup
  • 1 tbs rice wine vinegar
  • 1 tbs soy sauce
  • 100g firm tofu, diced into 2cm cubes
  • 1 tsp sesame oil
  • 1 cucumber, deseeded & diced
  • 1 carrot, grated
  • 1/2 avocado, diced
  • 1 spring onion, thinly sliced
  • 2 tsp sesame seeds, toasted
  • 1 sheet of nori seaweed, thinly sliced

Method:
  1. To make the dressing, mix together rice wine vinegar with soy sauce with 2 tsp water and set aside.
  2. Cook rice according to packet instructions.
  3. In a frypan over medium-high heat, toss tofu with oil and fry for a couple of minutes until golden.
  4. Toss rice with tofu, cucumber, carrot, avocado, spring onion and dressing. Top with sesame seeds and nori strips to serve.
