Vegan Chilli Beans

Vegan Chilli Beans

This is delicious, easy to make and perfect on a cold night. This recipe works great as a leftover lunch too. 

Ingredients:

  • 2 tbs of olive oil

  • 1 medium red onion chopped

  • 1 carrot diced

  • 4 cloves of minced garlic

  • 2 tsp of chilli powder

  • 2 tsp of ground cumin

  • 1 and 1/2 tsp of smoked paprika

  • 1 tsp of dried oregano

  • 1 tin of crushed tomatoes

  • 1 400g tin of refried beans 

  • 1 400g tin of black beans 

  • 2 cups of vegetable stock 

  • 200g of corn

  • 1 small red capsicum diced with seeds removed

  • 1 small zucchini diced

 

Method:

  1. Heat oil in a large pan. Add onion, capsicum, garlic, carrot and zucchini. Cook on medium heat until soft. Add spices and stir. 

  2. Add crushed tomatoes, refried beans and stock, combine. Allow to simmer on medium to low heat for 15-20minutes.

  3. Add corn and black beans. 

  4. Allow to simmer for another 5-10 minutes on low heat. Serve with crusty bread.
