Spicy Peas and Quinoa

This is a recipe from the Family Harvest cookbook by Simone Kelly.

I love this recipe as it is super quick to make and only uses 4 ingredients.

Ingredients:

  • 2 cups of frozen peas

  • 1 tbs of Indian curry paste (such as vindaloo or korma)

  • 1-2 tbs of butter or a butter alternative

  • 2 cups of cooked quinoa or rice

Method:

  1. Cook quinoa or rice as per packet instructions.

  2. Heat butter in a frying pan and add the spice paste and peas.

  3. Stir for a couple of minutes until hot and the peas are cooked.

  4. Serve on a bed of quinoa or rice.

  5. Enjoy :)
