Soba Noodle Bowl

Soba Noodle Bowl

This is a recipe from my friend Ie Erlina. It is quick, simple to make and full of favour!


  • 2 tablespoon of olive oil

  • 2 tablespoon of soy sauce

  • 2 tablespoon of Chinese black vinegar

  • A splash of sesame oil

  • A teaspoon of garlic - chopped

  • A teaspoon of ginger - julienne cuts (matchstick sizes)

  • A splash of chilli oil

  • Sesame seeds

  • 2 bunches of dried soba noodle

  • 1 cup of  mixed of cold veggies (eg: cabbage, mushrooms, kale, cucumbers or snow peas) thinly sliced.

  • 1 cup of warm veggies - (eg:broccoli, edamame beans or anything you like or have on the fridge).


  1. To make garlic and ginger oil, heat oil in a pan. As soon as the oil reaches boiling point, remove the pan from the heat. This process is important to make sure ginger and garlic wont burn. Add garlic and ginger to the oil. Keep stirring until ginger and garlic are evenly cooked. Place pan aside to cool down.

  2. Cook soba noodles as per packet instructions. Rinse cooked soba noodle with cold water and add few drops of sesame oil, stir through. Set aside.

  3. Blanch broccoli and edamame beans in boiling water and set aside.

  4. Once the garlic and ginger oil has cooled down, add in the rest of the dressing ingredients (soy sauce, vinegar, chilli oil and few drop of sesame oil). Stir to combine.

  5. Plate noodles with both the cold veggies and warm veggies, pour dressing on top and sprinkle sesame seeds.
