Lentil Sauce with Mashed Sweet Potato

Serves 2-3

This meal is a delicious alternative to pasta or spaghetti with a vegetarian sauce.

Ingredients:
  • 1 large or 2 medium sized sweet potatoes
  • 1 tablespoon coconut or olive oil
  • 1 whole carrot grated
  • 1 whole zucchini grated
  • 400g tinned brown lentils
  • 400g tin crushed tomatoes
  • 1/4 cup vegetable stock
  • 1 tablespoon tomato paste
  • 1 brown onion diced
  • 2 cloves of garlic diced
  • Salt & pepper to taste

Method:
  1. To make mashed sweet potato, peel and roughly chop sweet potato. Add to a pot of boiling water with salt and allow to cook for 15 minutes or until soft. Drain water and mash. Add a teaspoon of butter to make more creamy if you desire.
  2. Add onion, garlic and oil to a pan. Simmer. Add carrot, zucchini and continue to cook until soft. Add stock, tomato paste, lentils and crushed tomatoes. Continue to cook on low heat for 15 minutes.
  3. Serve sauce on mashed potato and add fresh basil or cheese to serve.
