- 2tbs olive oil
- 1tbs white wine vinegar
- 1 tsp lemon juice
- 125g haloumi sliced
- 1 zucchini sliced
- 1 small red onion sliced
- A large handful of cheery tomatoes sliced
- A small bunch of basil
- 2 serves of pasta
- Cook the pasta as per packet instructions. I like to use wholemeal pasta.
- In a large frying pan add halloumi, onion and zucchini. Cook on medium heat rotating cheese and veggies until cooked and halloumi is golden on both sides.
- Meanwhile combine oil, lemon and vinegar in jar. Shake. Season with salt and pepper.
- Toss cherry tomatoes in pan to heat up. Add drained pasta to pan and stir. Drizzle with dressing and serve.
