This Forbidden Fried Rice is fried rice with a twist.
Serves 2.
Ingredients:
- 1 cup black rice
- 2 cups of water
- 1 onion sliced
- 5 shallots finely sliced
- 1 small carrot finely diced
- A handful of button mushrooms sliced
- 1 small red capsicum died
- 125g tin of corn
- 1/2 cup frozen peas
- 1 tablespoon of sesame oil
- 2 tablespoons of soy sauce
- Salt to season
Method:
- Place rice, salt and water in a saucepan and bring to the boil. Reduce heat and simmer for 20-30minutes.
- Place sesame oil, onion, carrot, mushrooms and capsicum in a large saucepan. Cook on medium heat until vegetables are tender. Add peas, corn and soy sauce.
- Continue to let vegetables simmer for 5 minutes. Add cooked black rice to vegetables. Combine.
- Serve :)
