Easy Lentil Curry

Easy Lentil Curry

Serves 2-3

This is really simple to make and you can add in any veggies you have in your fridge.

This recipe is vegan. Let me know what you think : )

Ingredients:

  • 1 brown onion, thinly diced

  • 1 carrot, sliced

  • 1 cup of pumpkin, cut into 1cm cubes

  • 2 cups of vegetable stock

  • 110ml coconut milk

  • 1/2 tsp paprika

  • 1 tbs curry powder (you can add more if you like, I do)

  • 1 cup frozen peas

  • 1x 400 ml tin of lentils, drained

  • Olive oil

  • 1 packet of microwave basmati rice

Method:

  1. Heat oil in a large frying pan, cook onion until soft.

  2. Add in carrot, pumpkin, paprika and curry powder, Stir.

  3. Add in vegetable stock and coconut milk, reduce heat and simmer until vegetables are soft and cooked through.

  4. Add in peas and lentils. Stir and simmer for another 2-4 minutes.

  5. Cook rice as per packet instructions.

  6. Serve with rice. Enjoy :)
