Creamy Pesto Pasta

Serves 4

Ingredients

  • 300g of firm tofu

  • 2 handfuls of kale (or spinach)

  • 1 avocado, skin removed 

  • 1 bunch of basil (approx. 1 cup)

  • 40g nutritional yeast

  • 20g of hemp seeds

  • 1 tbs miso paste

  • 1 tsp garlic powder

  • Juice from 1 lemon

  • 1/2 tsp salt

  • Pepper

  • Pasta

  • 1 head of Broccoli 

Instructions: 

  1. Add the following ingredients to a blender: tofu, kale, avocado, basil, nutritional yeast, hemp seeds, miso paste, garlic powder, lemon, salt & pepper. Blend until smooth. 
  2. Add water to thin the sauce to your desired consistency and season to taste. I added about 2tbs.
  3. Meanwhile cook your pasta as per packet instructions. 
  4. Bring a pot of water to the boil and boil broccoli until soft and bright green.
  5. Stir it all together and heat gently. 
  6. Top with lemon juice and a sprinkle of hemp seeds. Enjoy. 

 

Tip* If you have any leftover sauce it makes a delicious dip!
