Makes about 6-8 medium sized pancakes.
Ingredients:
- 1 cup of self raising flour
- 1/3 cup of H.alt hemp protein powder
- 1 1/2 cups of almond or coconut milk
- 1 large ripe banana, mashed
- 1 teaspoon of vanilla essence
- Serve with maple syrup & extra banana
- Optional* Sprinkle hemp seeds on top for an extra protein boost.
Method:
- Sift flour into a large bowl. Add hemp protein powder, milk, vanilla and banana and whisk until smooth.
- Heat a large non-stick frying pan over medium heat. Spray with coconut oil or grease with melted butter.
- Using 1/3 cup, pour mixture into pan, cook each pancakes for 2 minutes or until bubbles appear on surface. Flip and cook for a further 1-2 minutes or until cooked through.
- Transfer pancakes to a plate. Cover loosely with a tea towel to keep warm.
- Repeat with remaining mixture, spraying pan between each pancake.
- Serve with banana and maple syrup.
