Easy Lentil Curry

Easy Lentil Curry

Serves 2-3

This is really simple to make and you can add in any veggies you have in your fridge.

This recipe is vegan. Let me know what you think : )

Ingredients:

  • 1 brown onion, thinly diced

  • 1 carrot, sliced

  • 1 cup of pumpkin, cut into 1cm cubes

  • 2 cups of vegetable stock

  • 110ml coconut milk

  • 1/2 tsp paprika

  • 1 tbs curry powder (you can add more if you like, I do)

  • 1 cup frozen peas

  • 1x 400 ml tin of lentils, drained

  • Olive oil

  • 1 packet of microwave basmati rice

Method:

  • Heat oil in a large frying pan, cook onion until soft.

  • Add in carrot, pumpkin, paprika and curry powder, Stir.

  • Add in vegetable stock and coconut milk, reduce heat and simmer until vegetables are soft and cooked through.

  • Add in peas and lentils. Stir and simmer for another 2-4 minutes.

  • Cook rice as per packet instructions.

  • Serve with rice.

  • Enjoy :)
