Spicy Peas and Quinoa
This is a recipe from the Family Harvest cookbook by Simone Kelly.
I love this recipe as it is super quick to make and only uses 4 ingredients.
Ingredients:
2 cups of frozen peas
1 tbs of Indian curry paste (such as vindaloo or korma)
1-2 tbs of butter or a butter alternative
2 cups of cooked quinoa or rice
Method:
Cook quinoa or rice as per packet instructions.
Heat butter in a frying pan and add the spice paste and peas.
Stir for a couple of minutes until hot and the peas are cooked.
Serve on a bed of quinoa or rice.
