Miso Mushroom Bowl

This is a recipe by 28 by Sam Wood. It was easy to make, healthy and delicious.
Ingredients
1 cup quinoa rinsed
300 g tofu (firm) cut into cubes
80 g mushrooms (mixed) sliced
200 g broccolini (baby broccoli) cut into 3cm cubes
2 teaspoon coconut oil
1 tablespoon sesame seeds
2 spring onions chopped
Ingredients for miso sauce
1 clove garlic crushed
2 teaspoon ginger grated
2 teaspoon chilli (small red) chopped
1 tablespoon miso paste
2 tablespoon mirin
2 tablespoon of soy sauce
2 tablespoon water
Method:
Make the miso sauce and marinate the tofu while you prepare the rest of the meal.
Cook the quinoa according to packet instructions. Take off the heat and leave, covered, until needed.
Meanwhile stir fry the mushrooms and broccolini in some coconut oil until just tender and then set aside.
Add the tofu but reserve the marinade. Fry the tofu for 3-4minutes each side and in the final 2 minutes add the marinade and the broccolini and mushrooms.
Stir until the marinade thickens. Place the quinoa in a bowl, top with the mushroom mixture and then sprinkle on some sesame seeds, spring onion and extra chilli if preferred.
