Avocado and Halloumi on Toast

Avocado and Halloumi on Toast

This is my favourite meal to have for breakfast. 

Serves 2

Ingredients:

  • 1 avocado mashed

  • 1 packet of halloumi cheese cut into slices

  • Lemon or lime juice

  • 1 tsp of olive oil

  • Salt and pepper to season

  • Chilli flakes optional

  • 4 slices of thick cut sourdough

Method:

  1. Mash the avocado, lime juice, salt, pepper and chilli flakes together in a bowl, set aside.

  2. Add oil and halloumi slices to a pan. Cook on medium to high heat until golden, flip and cook until golden on the other side.

  3. Meanwhile, toast bread in a toaster.

  4. Spread the avocado evenly on the toast and top with the halloumi. Serve with an additional lemon wedge :) Enjoy.
