Avocado and Halloumi on Toast
This is my favourite meal to have for breakfast.
Serves 2
Ingredients:
1 avocado mashed
1 packet of halloumi cheese cut into slices
Lemon or lime juice
1 tsp of olive oil
Salt and pepper to season
Chilli flakes optional
4 slices of thick cut sourdough
Method:
Mash the avocado, lime juice, salt, pepper and chilli flakes together in a bowl, set aside.
Add oil and halloumi slices to a pan. Cook on medium to high heat until golden, flip and cook until golden on the other side.
Meanwhile, toast bread in a toaster.
Spread the avocado evenly on the toast and top with the halloumi. Serve with an additional lemon wedge :) Enjoy.
