Quick Fried Rice
Serves 2, the perfect weeknight dinner if you are short of time.
Ingredients:
2 serves of cooked rice
1 200g tin of corn drained
1 carrot sliced into small cubes
1 small brown onion diced
1 bunch of green shallots, sliced
1 handful of frozen peas
1 tbs of sesame oil
2-3 tbs of soy sauce
Method:
Heat oil in a large saucepan. Add onion, carrot, corn and peas. Cook on medium to high heat until vegetables are soft. Add shallots and soy sauce.
Cook for another 2 mins.
Add rice and stir until combined.
Serve :)
Tip: For a fancy garnish you can slice up some shallots and place in ice water until they curl.
