Quick Fried Rice

Quick Fried Rice

Serves 2, the perfect weeknight dinner if you are short of time. 

Ingredients:

  • 2 serves of cooked rice

  • 1 200g tin of corn drained

  • 1 carrot sliced into small cubes

  • 1 small brown onion diced

  • 1 bunch of green shallots, sliced

  • 1 handful of frozen peas

  • 1 tbs of sesame oil

  • 2-3 tbs of soy sauce

Method:

  1. Heat oil in a large saucepan. Add onion, carrot, corn and peas. Cook on medium to high heat until vegetables are soft. Add shallots and soy sauce.

  2. Cook for another 2 mins.

  3. Add rice and stir until combined.

  4. Serve :)

Tip: For a fancy garnish you can slice up some shallots and place in ice water until they curl.
