Satay Quinoa with Cauliflower

Satay Quinoa with Cauliflower

Serves 2-3

This is a Sam Wood recipe. It is so delicious!! Even my meat eating partner loves it.

Ingredients:

  • 1 head of cauliflower

  • 1 tsp of coconut oil

  • 1 red onion diced

  • 1 small red chilli finely chopped (I used chilli flakes)

  • 1 1/2 cups of quinoa

  • 1 cup of of coconut cream

  • 2 1/4 cups of vegetable stock

  • 2 tbs of soy sauce

  • 2 tbs of peanut butter

  • 1 large handful of green beens chopped in half

Method:

  1. Preheat oven to 200 degrees and line baking try with baking paper. 

  2. Floret the cauliflower. Place the florets on the prepared tray and roast for 30 minutes of until golden. 

  3. Meanwhile, heat the oil in a large frying pan over high heat. Add onion, garlic, chilli and cook for 2-3 minutes until soft. 

  4. Add quinoa, coconut cream, stock, soy sauce and peanut butter. Stir well. Cover and let simmer for 10 minutes. 

  5. Add chopped beans to the quinoa mix. Cover and simmer for another 10 minutes or until all liquid has evaporated and the quinoa is soft and fluffy. 

  6. Remove from the heat and add cauliflower on the top to serve. 

  7. Enjoy :)
