Vegetable Soup
Serves 4
This is a delicious dinner when you are sick or need something to warm you up on a winters night.
Ingredients:
1 brown onion roughly sliced
3 cloves of garlic
1 leek sliced (Only use the white part of the leak)
1 peeled potato sliced
1 large piece of pumpkin chopped into small pieces (I used a 1/4 of a Kent)
1 carrot peeled and roughly sliced
1 litre of vegetable stock
1 cup of water
Salt and pepper to season
Method:
Add 1tbs of olive oil to a large saucepan. Cook onion, leek and garlic until soft. Add the other chopped vegetables, stir to combine.
Add stock and water, place a lid on the pan and bring to the boil.
Once boiling remove lid and let soup cook for 40 mins or until vegetables are soft.
Remove from heat and blend with a stick blender. Season with salt and pepper.
Serve with crusty bread :)
