Vegetarian Burritos

Vegetarian Burritos

This is a childhood favourite recipe.

Serves 4 

Ingredients:

  • 1 Old El Paso burrito kit 

  • 1 red onion diced

  • 3 cups of Iceberg lettuce shredded 

  • 2 roma tomatoes diced

  • 1 cup of grated tasty cheese

  • 1 avocado mashed (for the best guacamole follow the recipe on my website)

  • 400g tin of your favourite beans. I use black or Old El Paso Mexi Beans

Method:

  1. Place diced salad on a share plate for serving.  

  2. Make guacamole (see recipe on website).

  3. Drain beans and add 1 tablespoon of taco seasoning to them. Mix and microwave for 3 minutes or until hot.

  4. Heat up burritos in sandwich press for 10 seconds each. 

  5. Serve with beans, guacamole, salad and salsa.
