Vegetarian Burritos
This is a childhood favourite recipe.
Serves 4
Ingredients:
1 Old El Paso burrito kit
1 red onion diced
3 cups of Iceberg lettuce shredded
2 roma tomatoes diced
1 cup of grated tasty cheese
1 avocado mashed (for the best guacamole follow the recipe on my website)
400g tin of your favourite beans. I use black or Old El Paso Mexi Beans
Method:
Place diced salad on a share plate for serving.
Make guacamole (see recipe on website).
Drain beans and add 1 tablespoon of taco seasoning to them. Mix and microwave for 3 minutes or until hot.
Heat up burritos in sandwich press for 10 seconds each.
Serve with beans, guacamole, salad and salsa.
YUM!
Salad example. You can also add carrot.
