Mexican Dip
This recipe is my favourite thing to make when I have people over. It's a crowd pleaser for sure!
This recipe was inspired by my Aunty Jill.
Ingredients:
2 packets of corn chips
2 x 400g can refried beans
35g packet taco season mix
1 cup of sour cream
2 ripe avocado, mashed with lemon juice and seasoned with salt and pepper. (You can even add some fine chopped red onion in if you like.)
1 tomato, diced
6 shallot stems diced
1 jar of tomato salsa (I use medium spiced salsa)
1/2 cup grated tasty cheese
Method:
Mix together the refried beans and 1/2 the taco seasoning in a bowl. Spoon into the base of a casserole dish or large bowl. Spread to form bottom layer
Mix the remaining taco seasoning with 1/2 the sour cream and spread over beans.
Add avocado mix over sour cream layer. You can add another layer of beans after this if you desire.
Top avocado layer with your second layer of sour cream mix.
Sprinkle sour cream layer with diced tomato, onion and cheese.
Serve with corn chips.
