Cauliflower and Leek Soup

Cauliflower and Leek Soup

Serves 4

Ingredients: 

  • 1 tablespoon of olive oil

  • 1 brown onion sliced

  • 1 leek sliced

  • 1 head of cauliflower cut into florets

  • 2 large cloves of garlic sliced

  • 1 litre of stock (I used MASSEL 'chicken style' stock. It is Vegan) 

  • Salt snd pepper to season

  • Bread to serve

Method: 

  1. Add olive oil, leek, onion and garlic to a large sauce pan. Cook on medium heat until onion and leek are soft. Add salt and pepper.

  2. Add cauliflower and stock and bring to the boil. Cook until all vegetables are soft. (This takes up to 20 minutes).

  3. Remove from heat allow to cool slightly. Blend up soup with a bar mix until smooth.

  4. Serve with toasted sourdough roll.
