Forbidden Fried Rice
Fried rice with a twist.
Serves 2
Ingredients:
1 cup black rice
2 cups of water
1 onion sliced
5 shallots finely sliced
1 small carrot finely diced
A handful of button mushrooms sliced
1 small red capsicum died
125g tin of corn
1/2 cup frozen peas
1 tablespoon of sesame oil
2 tablespoons of soy sauce
Salt to season
Ingredients i used. You can also add a fried egg if you like.
Method:
Place rice, salt and water in a saucepan and bring to the boil. Reduce heat and simmer for 20-30minutes.
Place sesame oil, onion, carrot, mushrooms and capsicum in a large saucepan. Cook on medium heat until vegetables are tender. Add peas, corn and soy sauce.
Continue to let vegetables simmer for 5 minutes. Add cooked black rice to vegetables. Combine.
Serve :)
