Quick Vegetable Curry
Serves 2-3
Ingredients:
1 medium brown onion finely chopped
1 Passage to India Tikka Masala simmer sauce
1 x 400g tin of chickpeas
1 x 200g of coconut milk
Your favourite vegetables or whatever you have in your fridge or freezer (I love to use frozen peas, beans, mushrooms, zucchini and cauliflower)
Jasmine rice optional
Method:
SautΓ© onions in non stick pan.
Add vegetables and stir for 3-4 minutes.
Stir in curry sauce, coat vegetables.
Add coconut milk.
Simmer on low heat for 20-30 mins until vegetables are soft.
Add chickpeas and simmer for another 2-5 minutes.
Serve with rice.

Serving Tip:
Serve with Jasmine rice and add a dollop of Greek yoghurt
