Quick Vegetable Curry

Quick Vegetable Curry

Serves 2-3 

Ingredients: 

  • 1 medium brown onion finely chopped 

  • 1 Passage to India Tikka Masala simmer sauce

  • 1 x 400g tin of chickpeas 

  • 1 x 200g of coconut milk

  • Your favourite vegetables or whatever you have in your fridge or freezer (I love to use frozen peas, beans, mushrooms, zucchini and cauliflower) 

  • Jasmine rice optional 

 

Method: 

  1. SautΓ© onions in non stick pan.

  2. Add vegetables and stir for 3-4 minutes.

  3. Stir in curry sauce, coat vegetables.

  4. Add coconut milk.

  5. Simmer on low heat for 20-30 mins until vegetables are soft.

  6. Add chickpeas and simmer for another 2-5 minutes.

  7. Serve with rice.

  8.  Enjoy :)

Serving Tip: 

Serve with Jasmine rice and add a dollop of Greek yoghurt
