Garlic and Mushroom Pizza
This pizza is from Womens Weekly's VEG OUT cookbook. I have altered it slightly to make it more simple and quick to prepare.
Depending how much time you have you can make your own pizza base or use a pre made one. Both will taste delicious.
Serves 4
Ingredients:
2 tablespoons of olive oil
4 cloves of garlic
500g of mixed mushrooms (You can buy these in a pack at Coles or Woolworths.)
1 small brown onion finely diced
1 extra spoon of olive oil
Mozzarella cheese
Pizza Dough:
2 1/4 cups of plain flour
2 teaspoons of dried yeast
A pinch of salt
1 1/3 tablespoons of olive oil
3/4 cup warm water
Method:
Make pizza dough (Combine flour, yeast and salt in a large bowl, make a well in the centre. Stir in oil and enough water to mix to soft dough. Knead dough on floured surface for 10 minutes or until smooth and elastic. Place dough back in bowl. Cover and stand in a warm place for 1h until dough has doubled in size.)
Preheat oven to 240 degrees. If you have a stone base pizza oven you a cook your pizza in this.
Place oiled pizza tray in oven.
Roll dough on floured surface into a circle. Removed tray from oven and place pizza dough on it.
Brush olive oil and garlic over the base.
Top with onions, mushrooms and mozzarella cheese.
Drizzle with extra olive oil.
Bake pizza for 15 minutes until cheese is golden and base is crisp.
Serve
*I served pizza with a rocket and avocado salad. I used lemon, mustard and oil for a quick tasty dressing.
