Halloumi and Vegetable Pasta
Serves 2
Ingredients:
2tbs olive oil
1tbs white wine vinegar
1 tsp lemon juice
125g haloumi sliced
1 zucchini sliced
1 small red onion sliced
A large handful of cheery tomatoes sliced
A small bunch of basil
2 serves of pasta
Method:
Cook the pasta as per packet instructions. I like to use wholemeal pasta.
In a large frying pan add halloumi, onion and zucchini. Cook on medium heat rotating cheese and veggies until cooked and halloumi is golden on both sides.
Meanwhile combine oil, lemon and vinegar in jar. Shake. Season with salt and pepper.
Toss cherry tomatoes in pan to heat up. Add drained pasta to pan and stir. Drizzle with dressing and serve.
