Lentil Sauce with Mashed Sweet Potato

Lentil Sauce with Mashed Sweet Potato

Serves 2-3

This meal is a delicious alternative to pasta or spaghetti with a vegetarian sauce.

Ingredients:

  • 1 large or 2 medium sized sweet potatoes

  • 1 tablespoon coconut or olive oil 

  • 1 whole carrot grated

  • 1 whole zucchini grated

  • 400g tinned brown lentils 

  • 400g tin crushed tomatoes

  • 1/4 cup vegetable stock 

  • 1 tablespoon tomato paste 

  • 1 brown onion diced

  • 2 cloves of garlic diced

  •  Salt & pepper to taste

Method:

  • To make mashed sweet potato, peel and roughly chop sweet potato. Add to a pot of boiling water with salt  and allow to cook for 15 minutes or until soft. Drain water and mash. Add a teaspoon of butter to make more creamy if you desire. 

  • Add onion, garlic and oil to a pan. Simmer. Add carrot, zucchini and continue to cook until soft. Add stock, tomato paste, lentils and crushed tomatoes. Continue to cook on low heat for 15 minutes. 

  • Serve sauce on mashed potato and add fresh basil or cheese to serve.
