Veggie Tacos

Veggie Tacos

This recipe is from Sam Woods 28 program. These tacos are so delicious I had to share. 

Ingredients:

  • 2 large field mushroom cut into slices

  • 1  zucchini cut into long strips

  • 1  red onion 

  • 3 teaspoon extra virgin olive oil 

  • 2 garlic cloves finely chopped

  • 1 teaspoon smoked paprika 

  • 1 teaspoon ground cumin 

  • 1 teaspoon salt 

  • 1/2 teaspoon black pepper 

  • 6  cherry tomato halved

  • 2 small tortillas (I used wholemeal burrito tortillas)

  • 1/4  avocado 

  • 3 teaspoon lime juice 

  • 1/2 cup of tasty cheese grated

Method:

  1. Preheat oven to 200 and line a large baking tray with baking paper.

  2. Combine mushroom, zucchini and onion in a bowl with oil, garlic, spices, salt and pepper, then spread on baking tray. Bake for 15 minutes, add tomatoes and cook for another 5 minutes.

  3. Heat tortillas for a few minutes in the oven or in a sandwich press. Mash avocado with 2 tsp of lime juice and spread on warm tortillas.

  4. Add roasted vegetables, 1 tsp lime juice, cheese and coriander to serve.

Tip: Add some brown rice if you desire.
