Veggie Tacos
This recipe is from Sam Woods 28 program. These tacos are so delicious I had to share.
Ingredients:
2 large field mushroom cut into slices
1 zucchini cut into long strips
1 red onion
3 teaspoon extra virgin olive oil
2 garlic cloves finely chopped
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
6 cherry tomato halved
2 small tortillas (I used wholemeal burrito tortillas)
1/4 avocado
3 teaspoon lime juice
1/2 cup of tasty cheese grated
Method:
Preheat oven to 200 and line a large baking tray with baking paper.
Combine mushroom, zucchini and onion in a bowl with oil, garlic, spices, salt and pepper, then spread on baking tray. Bake for 15 minutes, add tomatoes and cook for another 5 minutes.
Heat tortillas for a few minutes in the oven or in a sandwich press. Mash avocado with 2 tsp of lime juice and spread on warm tortillas.
Add roasted vegetables, 1 tsp lime juice, cheese and coriander to serve.
Tip: Add some brown rice if you desire.
