Apple and Coconut Crumble
This is my go to dessert recipe for whenever I have guests over.
Serves 4
Ingredients:
1 cup of plain flour
1/2 cup of coconut
1/4 cup of brown sugar
100g chilled butter, chopped
1/2 cup rolled oats
4 Granny smith apples, peeled and sliced
Vanilla custard or ice-cream, to serve
Method:
Preheat oven to 180. Combine flour, coconut, sugar, butter and oats in a bowl.
Use your fingertips to rub the butter into the flour mixture until the mixture resembles crumble.
Meanwhile cook apple in a microwave proof dish in water until apple is soft. Drain excess water.
Place the cooked apple into a large ovenproof dish and cover with crumble mixture.
Bake in oven for 20-25 minutes or until golden.
Spoon the apple crumble into serving bowls. Serve with either custard or ice cream.

Tip: I also love to add frozen blueberries or tinned pears with the apple sometimes.
